These ravioli with bitter greens are an elegant dish for family and company. Fresh pasta is rolled out and filled with greens, such as escarole or chicory, as well as ericotta and mozzarella. The ravioli is then cooked, and topped with brown butter-walnut sauce. Cheese, lemon juice, and parsley knock it out of the park.

It’s a mindboggling breakfast. Cooked potatoes are passed through a food mill, blended with butter, then piped into Mason jars. An egg is cracked into each, and the whole shebang is covered and set into simmering water. A creamier, more buttery, luscious-er breakfast cannot be had. (That is, unless you stir some grated cheese into the potatoes…)

This asparagus and fried egg panini is made from thickly sliced sourdough bread stuffed with grilled or sautéed asparagus tossed in a lemon dressing, a fried egg, Tallegio cheese, and arugula. Then the whole shebang is grilled in butter until toasty and golden brown.

Spinach almond pesto, a milder alternative to the classic basil pine nut pesto, is a cinch to make. Toss spinach, roasted almonds, Parmesan cheese, lemon juice, and olive oil in a food processor and buzz until smooth. Ten minutes and you’re done.

For this beer braised chicken, chicken thighs and root vegetables–onion, carrots, potatoes, and celery root–are simmered low and slow in porter. Brown sugar, Dijon mustard, tomato paste, and thyme round out the flavors. Note: Many porters tend to be bitter, so if you’re not a fan of bitter, try a less aggressive brown ale.
