How does the selenium in tuna help lower the risk of mercury-related problems?
Researchers have recently discovered that tuna contains the mineral selenium in an unusual form called selenoneine. This form of selenium plays an important role in the health of the fish by serving as an antioxidant and protecting the fish's red blood cells from free radical damage. Interestingly, it is also able to bind together with mercury compounds in the fish's body (including methyl mercury, or MeHg) and lower their risk of mercury-related problems.

Extra Virgin Olive Oil: Olive oil has long been recognized for its high percentage of monounsaturated fat. This plant contains between 70-85% of its fat in the form of oleic acid - a monounsaturated, omega-9 fatty acid. When diets low in monounsaturated fat are altered to increase the monounsaturated fat content (by replacing other oils with olive oil), research study participants tend to experience a significant decrease in their total blood cholesterol, LDL cholesterol, and LDL:HDL ratio. Recent research studies have taken these heart-healthy effects of olive oil one step further. Olive oil's monounsaturated fat content (specifically, its high level of oleic acid) has now been determined to be a mechanism linking olive oil intake to decreased blood pressure. Researchers believe that the plentiful amount of oleic acid in olive oil gets absorbed into the body, finds its way into cell membranes, changes signaling patterns at a cell membrane level (specifically, altering G-protein associated cascades) and thereby lowers blood pressure. To our knowledge, this is the first time that the monounsaturated fat content of olive oil has been linked not only to cholesterol reduction, but also to reduction of blood pressure.
Mediterranean Lentil Salad
Hearty lentils combine with fresh herbs and tangy balsamic vinegar in this quick and easy salad. Prep and Cook Time: 10 minutes
Ingredients:
- 1 cup baby spinach, romaine lettuce or arugula, thinly sliced
- 1 cup canned lentils, drained
- 1/4 cup red onion, thinly sliced
- 1/4 cup red bell peppers, thinly sliced
- 1/4 cup tomatoes, diced
- 1/4 cup parsley chopped
- 1 TBS crumbled feta
- 1-1/2 TBS [Mediterranean Dressing](
- 1-1/2 tsp balsamic vinegar
- Sea salt and pepper to taste
- Optional: 1/2 tsp fresh rosemary or oregano, chopped
Directions:
- Combine all ingredients except romaine in a large bowl. Gently toss in spinach or lettuce.
- This salad can marinate for up to 2 hours before serving or can be eaten right after it's made.
This salad keeps well for a to-go lunch.
