Ripe tomatoes, fresh basil, and custard, oh my! [logo]( [hero]( Tomato pie, a summer staple Dear Bakers, Generous cooks know that the best recipes are meant to be shared, not guarded, and give them away freely when asked. That's how I first came to make this [Tomato Pie](, our Bake of the Week. The recipe was shared with me a decade ago by Cole Ellis, chef and owner at Delta Meat Market and Bar Fontaine in Cleveland, Mississippi; I included a version of it in my cookbook, Repertoire. Cole, like me, believes that few things epitomize the glory of summer like tomatoes. Here, a rainbow assortment is showcased in a savory pie with a custard that includes mayonnaise, buttermilk, and Parmesan cheese, its flavor evocative of the mayo-and-tomato sandwiches I wait all year to eat. Not only is the tart exceptionally good to eat, it's beautiful, too. Generosity is on my mind this June, LGBTQ+ [Pride month](. We tend to think of generosity as transactional, the giving of something — be it a recipe or a batch of freshly baked cookies — to someone else. And while giving tangible things to others is indeed an act of generosity, it 's generosity of spirit that's on my mind this month. When we actively work to know, understand, and relate to people whose lived experiences are different from our own, and when we give compassion freely to others, generosity of spirit becomes an almost radical act, one that allows us to make room at the table for everyone. And on my table this summer will be [Tomato Pie](. In some parts of the country, jewel-like heirloom varieties are already piling up at the market in an astonishing array of colors and shapes. Elsewhere, peak tomato season is still a month or so away. But with this recipe in hand, when it does finally arrive, glorious and long-awaited, you'll be ready.
