By macerating rhubarb and strawberries (another watery fruit) with sugar to draw out their juices before baking, he did just that. (Bonus: he reduced the chances of a dreaded soggy bottom.) Those juices don't go to waste. While his [Strawberry-Rhubarb Galettes]( bake in the oven, Martin simmers the juices with a little lemon juice until they thicken and become a glaze.
