Fresh berries demand great recipes. Sunday Recipe Inspiration with PJ Batch 443 Begone bland winter

Fresh berries demand great recipes. [logo]( Sunday Recipe Inspiration with PJ Batch 443 [Strawberry Almond Flour Cake]( Begone bland winter strawberries, oh ye of the plastic clamshell! Fresh native berries are spreading northward fast; within a couple of weeks even those of you in Maine and Minnesota should be picking your own. And you know what that means: shortcake, of course. But don't get stuck on that old-timey (though yes, still tempting) dessert. When life (or your garden) hands you a quart of strawberries, there's more to bake than shortcake. Take [Chocolate-Dipped Strawberries]( — as in, take them away before I grab every last one of them! Is there a simpler way to enjoy summer's freshest, sweetest berries than married with smooth dark chocolate? [Melt the chocolate](; poke a toothpick through the top of a berry, dip it, and deposit onto a sheet of [parchment](. Repeat. Eat. Next step in the march from simple to sublime: [Strawberry Sorbet](. What, you thought you needed an ice cream maker to prepare this intensely flavorful and totally-refreshing-on-the-hottest-day treat? Nuh-uh. Just blitz berries, sweetener, and a touch of lemon in a food processor or blender, pour into a shallow pan, and freeze. A couple of tablespoons of vodka or your favorite complementary liqueur keep the sorbet soft and scoopable. Wait, aren't we going to get out the flour and actually bake something? Absolutely. One reason I love these [Strawberries and Cream Scones]( is their unusual crunchy-crackly vanilla sugar glaze. Another? They can be out of the oven in less than 30 minutes, ready for a generous smear of no-fuss [homemade strawberry jam]( (canning jars not required!). Tip: For another layer of flavor, do try the optional [Fiori di Sicilia](. [Strawberry Almond Flour Cake]( (above) is gluten-free, but don't let that scare you: It's also tender, moist, and doesn't require any special gluten-free ingredients. [Almond flour]( lends the cake nutty flavor and melt-in-your-mouth texture; sliced fresh strawberries on top are the metaphorical icing on the cake. Finally, how can you mention strawberries but not rhubarb? These two harbingers of early summer go together like — well, like the best buddies they are. [Strawberry-Rhubarb Pie]( is always a safe bet, but if you're not up for rolling pie crust try this [Strawberry-Rhubarb Cobbler](. A simple stir-together cake batter is poured over chopped and sweetened fresh rhubarb and strawberries, then the whole baked into a bubbling, aromatic salute to fruit. A shower of crunchy [sparkling sugar]( is the perfect garnish for the tender cake and jammy filling beneath. Pick up your berries and pick out your recipe; strawberry season is short and sweet. Happy baking!
