It's a recipe that seems destined to fail in the beginning; when the dough is first mixed, it's as thin as pancake batter. But after a series of folds and rests, what was once pourable becomes a gorgeous, marshmallow-y dough. Be gentle with it, and you'll achieve the bread's ridiculously light, weblike crumb. That crumb makes for a killer shot for Instagram. But that's not really the point.
