A year ago, when we woke up to a new year but the same pandemic, we hoped that by this time everything would be different. It is not. Covid, and all the anxieties that come with it, is still here. It can feel like we're gearing up for one big repeat of 2021 (or is it a three-peat of 2020?). But we are not the same! In the year that just passed we grew; our families grew; we tried new things; [we baked new cookies](. We evolved, even if it didn't feel like it. At King Arthur, that meant a new initiative, which you may have noticed here and there these past few months. Dubbed Bake of the Week, it is precisely what it sounds like: a recipe, dropped every Thursday, that we think is perfect for this exact moment — the one you should make now, right now, as soon as you can. This week's recipe: a scone. Nothing could be more classic, more familiar, to start the year with, right? Except that this scone has done its best to become a pasta. It's a [Cacio e Pepe Scone](, packed with both of that famous dish's distinguishing ingredients: heaps of Pecorino Romano and a fistful of black pepper. Some scones are staid; this one is alive. Which is why it's the scone to make this first week of another pandemic year. Because while no baked good can really do much to ease the pain of Covid, this one can at least remind us that interesting things lay ahead — that, in fact, 2022 will not be the same as 2021, or 2020.
