A Cozy Good-Bye to 2021

Comfort food recipes to close out a year of uncertainty. [logo]( Sunday Recipe Inspiration Batch 422 [Cookies and Cream Cake]( Normally, when the solar new year comes around, my custom is to share celebration-worthy cake recipes. After a year of so much (past, present, and future) uncertainty, I've decided to forgo that tradition. Instead, I'm leaning wholeheartedly into comfort, and I hope that you'll join me. We've had a number of recipes surface this year that have become fast comfort food favorites for me. It started with our Recipe of the Year, [Perfectly Pillowy Cinnamon Rolls](. These rolls are quite assuredly my go-to when I need something to ease anxious thoughts. They're as inviting as a warm hug and will add a touch of cozy to any dreary (or non-dreary) day. Of course, I could say the same for these [Conchas de Maíz]( from baker Arturo Enciso. They are unlike any pan dulce I have tried before, and as Arturo suggests, they go phenomenally well with his [Champurrado](. With a combo like that, this last week of 2021 could be the best of all. One of our more recent recipes that has comfort written all over it for me is this [Emperor's Pancake](. With Austrian origins, this dish reaches me at my core. It's traditionally served as a dessert, but I'd welcome it at breakfast, brunch, or even dinner any day. It's easy too, thanks to a little shortcut using our Buttermilk Pancake Mix. And finally, if you came here for cake, I certainly don't want to disappoint you. Equal parts celebratory and comforting, this [Cookies and Cream Cake]( (above) would set the right tone for 2022.
