Often the cookies will reflect the tastes and preferences of the baker. Take, for example, the cookies I want to bake and assemble for giving this year. [Mandelhörnchen (Almond Horns)](: Chewy with a touch of crunch, these horseshoe (or crescent) shaped cookies offer a triple dose of almond flavor. They're dipped in chocolate for an extra hit of flavor that complements rather than competes with the almond. [Flourless Fudge Cookies](: These are the ultimate chocolate cookie in my book. They're soft, chewy, dense, and fudgy, and can be made with extra chocolate or chopped nuts or kept plain. I've made them every which way, and they're always delightful. [Checkerboard Sablés](: New for me this year, these decorative cookies seem like such a fun little project. Tender and buttery, they'll act as a nice balance of texture and flavor to the first two cookies. [Thrice-Baked Rye Cookies](: Similarly, these extra-tender, unique cookies will help to round out the medley of textures (and flavors) in my cookie assortment this year. Thanks to a couple of neat baking tricks from YouTube baking sensation Claire Saffitz, they'll also add an element of surprise and delight. [Cola de Mono Alfajores]( (above): New to our website this week, this special variation on traditional alfajores was brought to us by our brilliant Lead Pastry Baker, Andrea Quillen. I honestly just want to bake a full batch of these for myself, but if I can manage to save some, they'll absolutely go to friends and family.
