Craving a little more chocolate in his life, he experimented with adding cocoa to everything from croissants to Danishes. But what he really wanted to make (and eat) was what he described as a "squishy chocolate bread." "I like the tenderness and eating quality of brioche, but you don't always have time to make it," he says. Instead, he turned to Japanese Milk Bread, which gets its characteristically soft, pillowy texture from the Asian technique known as tangzhong. On a mission to make a chocolate version, he broke out his cocoa powder and started testing. The biggest challenge was determining how much cocoa to add without disrupting the bread's hydration, explains Martin. Too much cocoa and the dough could become firm, resulting in a stiff rather than soft bread. Too little cocoa, and it would barely taste chocolatey. He eventually landed on a cocoa quantity at around 10% of the flour weight. From there, he says, "Everything was pretty easy." The result was a barely sweet, deeply chocolatey bread with a feathery, tender crumb. You can bake it as a loaf or use this special dough to get creative. Martin likes to shape the dough into rolls, create a slight well in the center filled with chocolate pastry cream and chocolate streusel, then bake and brush with whisky simple syrup while warm.
