Because everyone's day deserves a little homemade. [logo]( Sunday Recipe Inspiration Batch 407 [S'more Granola Bars]( Hello! How's everyone doing? Did you enjoy Ethan's pun-filled message last week? That guy is a marvel of wit, and his theme was a good reminder about how accommodating baking can be. Whether you're dealing with an abundance of eggs, gearing up for a new baking season, or constantly pursuing new and different school snacks (I'm over here raising my hand), baking can fulfill any food-related need. School snacks are a constant challenge for me, and I know I'm not alone. Sure, it seems easiest to just pack the same snacks every day — my 5-year-old hasn't called me on it yet — but that monotony is already getting to me. That's why I've decided to switch things up and bake through some of King Arthur's most snack-worthy recipes. This quest started with our recipe for [Faux-Reos](, which I was testing for another project (stay-tuned). By default the cookies became a snack/dessert request in my house daily, and that got me thinking about the other copycat-type snack recipes we have on our website. The first one that sprang to mind was the new [Vanilla Wafers]( recipe that one of our dedicated Senior Recipe Testers, Molly Marzalek-Kelly, developed. These bite-sized wafers would make a pretty awesome lunchbox snack, whether sandwiched with a filling or on their own. Similarly, my next project will be these [Buttery Rich Crackers](, which I plan to sandwich with peanut butter. We'll see if my daughter favors them over her go-to convenience store pick. And speaking of the snacks my daughter already favors, these [No-Bake Energy Bites]( are on regular rotation for us. They're a fun (i.e. quick and stress-free) project that we can do together, and we both really love coming up with new ways to flavor them. I also just introduced these [S'more Granola Bars]( (above) to her last week, and she's already asking when we can make them again. My "secret" is that I cut down on the amount of sweeteners, chocolate, and marshmallows; and I use whole grain flour in place of the all-purpose. I also like to leave some larger pieces of graham cracker in the mix for added crunch. These are highly cravable, so be sure to set aside some to snack on yourself. Because no matter who you are, or where you're schooling, working, or being, you should always have a good snack handy. Happy baking!
