Recipes to help when you're scrambling to use up those eggs. It means that they're baking, and looking for ways to bake better. But it also offers us a chance for some fun engagement, where we can share advice, a joke or two, and get a better idea about how our recipes are doing out there in your kitchens. Sometimes, though, we'll get an interesting question. And when we say interesting, we mean interesting. Here's a (gently paraphrased) example that we received on Twitter recently: "Hi King Arthur! What's a recipe that uses A LOT of eggs? Like, A LOT of eggs. We have too many eggs. Please help." Like any good parent, we love all the questions we receive equally. But we also sort of love these ones more. They're quirky and unconventional, and when we're not crafting a humorous pun-laden response ("Talk about supply-side eggonomics. -Ethan"), we use them as an excuse for a little inter-departmental cooperation. Which is exactly what we did. Our first stop brought us to our Social Editor, Annabelle Nicholson. Before writing our social media posts, Annabelle answered your questions on our Baker's Hotline. And folks, Annabelle came to play. Right off the bat, she suggested our [Flourless Chocolate Nut Cake](. Rich, nutty, and excellent for dinner parties, this baby uses ten eggs. TEN! That'll humble just about any hen. Next up, Chef Susan Reid. Chef Susan, whose baking tutorials have taken Instagram by storm, came up with her own doozy of an idea: start with this [Lemon Meringue Angel Food Cake](. With six egg whites in the cake, and then two more in the meringue, that's an additional eight eggs. But, you may ask, what are we to do with all those yolks? Well, Chef Susan had an answer for that too: whip up some [Pastry Cream]( with four of those egg yolks, and then use it to replace the filling in our [Boston Cream Pie](. Classic, American at its core, and hey, four more eggs. Our last stop brought us humbly to King Arthur's in-house expert in all things baking, our very own PJ Hamel. We're looking at eight eggs with this one, with the bonus pleasure of using up those zucchinis squashed in the back of your refrigerator. You know, the ones that your neighbors kept so kindly leaving on your doorstep, in your car, in the mailbox, and just about anywhere else they could during zucchini season.
