Fresh blueberries: the answer to ultimate summer baking Sunday Recipe Inspiration Batch 400 I thorou

Fresh blueberries: the answer to ultimate summer baking [logo]( Sunday Recipe Inspiration Batch 400 [Blueberry Grunt]( I thoroughly enjoy picking blueberries. Not only are they audibly delicious when dropped into a recycled yogurt container (does anyone else recite "kuplink kuplank kuplunk" as they're picking?), but picking them is almost inevitably an invitation to bake. Fresh blueberries are incredibly bakeable. In some applications they will retain their shape — much like a chocolate chip or chunk — waiting for the batter or dough that surrounds them to bake and set into place before bursting into juicy blueberry pools. These ever-famous [Department Store Blueberry Muffins]( and these [Blueberry Scones]( are popular examples of that particular blueberry quality. You certainly won't find soggy insides or heavy, fruit-laden bottoms in either of these! The other reason for the superb bakeability of blueberries has to do with a quality they share with most other fruit: they will become jam-like with more intense cooking or baking. This is why they're the ideal base for the tender biscuit topping of this [Blueberry Grunt]( (above) — think stovetop version of cobbler. It's also why a [Blue Ribbon Blueberry Pie]( is definitively better with fresh (rather than frozen) blueberries. Fresh, plump berries turn jammy; frozen, soft berries turn watery. Now, what happens when both blueberry qualities are combined into one dessert? You are treated to something like this incredibly succulent, and texturally diverse [Blueberry Key Lime Tart](. With its rich, zesty filling and juicy, jammy topping, it's what some would deem an ultimate summer dessert. I think you should bake it to see if you agree. Don't you? Side note: Next week, I'm going to let my esteemed colleague, and our new Editorial Director, David Tamarkin, take the reins of this weekly bit of inspiration. I'll be back in two weeks. Please have fun baking something in the meantime!
