For those of you not familiar with masa harina, here's a very brief summary about it: Masa harina (translation: dough flour) is an incredibly versatile ingredient made by processing corn in a particular way (known as nixtamalization) to make dough (masa). The dough is then dried and ground to make flour (harina). Although a relatively recent invention from the 1950s, masa harina is derived from the Mesoamerican millenia-old tradition of unlocking corn's nutrients and making it more digestible (and delicious) through nixtamalization. Masa harina's convenience and versatility make it THE ingredient to have in your kitchen if you're looking for meal planning inspiration. Case in point: other than water and maybe a little salt, masa harina is all you need to make truly exceptional [Tortillas de Maíz](. I have made these at least a dozen times in the past few months, and I have yet to repeat a meal; though these [Fish Tacos]( were a family favorite, so there will be more of them in my future. Tamales are also an excellent use of masa harina for meal planning purposes. We've grown quite fond of this recipe for [Tamals Tapatios]( from the beloved and talented Pati Jinich of PBS' Pati's Mexican Table. The recipe makes enough for multiple meals and the leftovers are delicious and easy to reheat. The same is true for this meaty [Tamal de Cazuela](. Served in a lidded casserole dish or Dutch oven, it's a nice option for a family-style dinner. It certainly made an appearance or two on my family's table as it was in development.
