Five twists on classic summer desserts. [logo]( Sunday Recipe Inspiration Batch 394 [Just Too Easy Peach Cobbler]( Well, summer fruits have landed folks, and by golly is it glorious to be enjoying them! It feels like a whole new culinary world has opened up just within the last two weeks. Suddenly my toddlers are equally content with a serving of fruit for dessert as they are with a cookie or ice cream. But these fruits aren't just making my parenting life easier. They've also sent my brain into recipe dreamland, and I'm itching to get baking with them. How about you? Normally I favor a no-bake approach when it comes to summer fruit. Recently though, I've come across some recipes on our website that I'm eager to try for myself. With their unique approaches to some of summer's most classic desserts, I think they'll tempt you too. First on my list is this [Just Too Easy Peach Cobbler](. Its bread cube topping always had me a little sceptical, quite honestly, but a conversation with our esteemed blogger, PJ Hamel, completely changed my mind about it. Now I'm thinking of it as part cobbler, part bread pudding, and I can absolutely see the beauty and irresistibility in that! Similarly, in hybrid desserts, I like the sound of this [Nectarine, Blueberry, and Vanilla Bean Pie with Poppy Seed Crumble](. I don't know that I would have ever thought to put poppy seeds in a crumble topping, but why not? I gather it adds amazing texture and a subtle, unique flavor, so I'm 100% sold. I'm also sold on the topping in this [Cherry Crisp](. Cardamom and pistachios (or almonds) are such a great complement to sweet-tart Bing cherries, which happen to be at their finest right now. I can definitely see this flavor trio being on repeat this summer. Or if cardamom doesn't excite you, there's this [Cherry-Vanilla Cream Pie](. Susan Reid, who you heard from in last Sunday's email, made it for an Instagram story last week and shared the leftovers with the test kitchen afterwards. It's safe to say that it was devoured pretty quickly. I personally have my eye on another of Susan's creations: this [Strawberry Cream Meringue Pie](. I tasted a small sliver of it back when she developed it (before it too, disappeared), and I'm quite confident I need more of this pie in my life. It'll be just the thing to bake with freshly-picked berries for a certain meringue-loving dad in my life next weekend. Which of these recipes speaks to you or a father figure in your life?
