Putting the chocolate in everyone's favorite chip cookie. One of the recent questions some of us have collectively pondered is: What is the ideal ratio of chocolate-to-cookie in a chocolate chip cookie? As with all matters chocolate chip cookie, this question has sent a lot of opinions flying. I'm guessing you all have thoughts on the subject too, so that's why I'm making it our theme for this week. Achieving the right balance of chocolate-to-cookie is always going to be a question of personal preference. Sometimes though, it's not always obvious what it is about the chocolate flavor profile of a particular cookie that you either like or dislike. That's where I'll jump in. The first and perhaps most evident way to adjust the chocolate in your chocolate chip cookie is to add more or less chocolate. Take these classic [Chocolate Chip Cookies]( as an example. Our default recommendation is 2 cups of chocolate chips. That amount yields cookies that are over-the-top chocolate flavor. To bring the chocolate to over-the-top levels though (a full pound of chips in one batch of cookies), simply add another 2/3 cup of chips like the recipe suggests. It could be as easy as that if you're really going for a heavy dose of chocolate in your cookies. Or you could simply play around with the type of chocolate you're using. Semisweet chips are somewhat traditional to chocolate chip cookies, but they're not the only choice available. Going with a chip that has a higher percentage of cacao, like the bittersweet chips listed in these [Brown Butter Chocolate Chip Cookies](, would give you deeper chocolate flavor with fewer chips. You could also choose chocolate that doesn't come in chip form. Chunks and wafers substitute nicely in a cookie, and so does a bar of chocolate chopped or grated into unequal shards or shavings. One final way you can influence the chocolate flavor in your cookies is through flavor boosters. Or they can be more traditionally chocolate-forward ingredients, like cocoa powder or even espresso powder. These [Chocolate Chocolate Chip Cookies]( rely on both for an over-the-top chocolate experience, while these [Crunchy Whole Grain Chocolate Chip Cookies]( employ just a slight bit of espresso for that subtle boost in flavor. Both recipes are models for what one extra line to your ingredient list can do for flavor. And that's a wrap, folks.
