Strawberry cakes to bake for post-pandemic celebrating. [logo]( Sunday Recipe Inspiration Batch 390 [Gesine's Chocolate and Strawberry Cream Puff Cake]( OK, folks, it's time to start talking about strawberries. Or, more specifically, baking with strawberries. Even though our berries here in Vermont won't be ripe for another month or so, I want to be ready for them. Plus, with all that there is to bake with strawberries, I anticipate I'll be returning to the subject at least one more time before the season is over. So with that, let's dive into the celebratory side of strawberry baking because those post-pandemic reunions are going to need cake! If you've read our recent blog post, "'First hug' recipes from our employee-owners," you'll recognize this [Strawberry-Filled Angel Food Cake]( that Annabelle Nicholson, our Associate Social Editor, called out. It has celebration written, or rather smeared, all over (and into) it in the form of strawberry mousse. I like the sound of that, though I could also be persuaded to try this [Strawberry Mousse Cake](. Mousse, after all, feels like a pretty universal language and a pretty universal way to celebrate. In other lusciously filled strawberry cakes, this [Strawberry Mascarpone Tea Cake]( and this [Berry Tiramisu]( are two that I would personally recommend. The tea cake is fairly new to our website and has garnered tons of love so far. The tiramisu is an old favorite that may challenge any preferences for traditional tiramisu. Both recipes marry strawberries with orange-scented mascarpone in beautiful harmony. It's on my bucket list to bake one day (when I can finally find a few hours without a toddler or two pulling me in one direction or another).
