5 vibrant lemon desserts to welcome May. [logo]( Sunday Recipe Inspiration Batch 388 [Lemon Curd]( It's May, folks! In Vermont, this is the month when nature erupts into practically every shade of green imaginable. It's absolutely glorious, and I'm personally welcoming this vibrancy and freshness wholeheartedly. I'm also thinking about how to bring this brightness to my baking, so this week I'm highlighting all things lemon. No discussion about baking with lemons would be complete without mentioning [Lemon Curd]( (above). Like sunshine by the spoonful, lemon curd adds brightness to whatever it touches. Easily one of my favorite uses for it is filling in this [Braided Lemon Bread](, but I've also been meaning to try these [Lemon Meringue Cupcakes](. Teacher Appreciation Week is this week, and Mother's Day is next Sunday. I think either recipe would provide appropriate recognition of the tremendously hard work these people have put in over the past year. Wouldn't you say? Perhaps you're not prepared to go the curd route in baking though. It is an extra step that takes time, and I understand schedules don't always allow for such luxuries. If that's the case for you, these ever-classic [Lemon Squares]( are the best way I can think of to get the zing of curd without the extra time and effort. I'm also a big fan of these [Lemon Sablé Cookies](. They're elegantly light and crispy, and they would be a fun project for little hands looking to help.
