We typically have to wait until early May for most of the edible signs of spring. There are some early green shoots we can count on, though. So this week, we'll dive into savory spring baking with chives. Chives are such a great enhancement in baking. I like to think of them as natural and aromatic green sprinkles that provide pops of color and flavor to savory baked goods. You can, of course, use them in recipes that explicitly call for them. These [Bacon-Cheddar-Chive Scones]( are notorious around here (for very good reason), and I'm a big fan of these [Keto-Friendly Parmesan-Chive Muffins](. They're a great make-ahead, on-the-go breakfast option for rushed mornings. Or if you do have the time to sit and enjoy toast, tartine-style with a fork and knife, this [Ricotta Chive Bread]( (above) is a great choice. Just look at how much color you could introduce into your morning! Some recipes are less explicit about chive inclusion, so that's where your own preferences come in. For example, I made our [Butterflake Herb Loaf]( last weekend and substituted chives for the two dried herbs and caraway seeds. The loaf was subsequently pulled apart with gusto by the members of my family pod. I have also made these [Quick Sourdough Herb and Scallion Pancakes]( with only chives (about 1/4 cup) in place of the scallions. That was a delicious way to take care of a little chive proliferation situation out my back door last year. This year, I have my plan to avoid that situation entirely. How will you bake with chives?
