5 Easter bread traditions from around the world [logo]( Sunday Recipe Inspiration Batch 383 [Greek Tsoureki]( Up next in the string of spring holidays is Easter. I somehow have let it creep up on me this year, so I'm eager to get to some baking this week. What am I especially excited about? Easter breads! With all the options, it's hard to know where to start, so I think I'll let wanderlust be my guide. This [Greek Tsoureki]( (above) has been on my mind recently. One of the spices it's made with, mahlep (also spelled mahleb, mahlab, mahlepi, and mahalepi), is used to flavor a wide range of Mediterranean and Middle Eastern breads, pastries, and desserts. I am keen to use this cherry-seed-derived spice in the tsoureki for Easter and discover all the other baking opportunities it presents. Maybe that excites you too? Or maybe it 's the decorating you're into. In that case, I'd recommend getting creative with the Eastern European [Paska](. There are photos of some pretty ornate loaves out there on the interweb, so have a browse if you need inspiration. You're sure to find it. Traveling west, Italy's orange-infused [Colomba Pasquale]( is another enriched Easter bread worth considering. Dove-like in shape and topped with almonds and pearl sugar, it distinguishes itself nicely if you're thinking about baking more than one bread for the holiday. The same is true of this rum-soaked [Polish Babka](, which is almost more like a cake than a bread and could be served as dessert.
