As difficult as the past couple of weeks have been — with the anniversary of compounding COVID cases and nationwide lockdowns — spring's arrival brings a familiar sense of hope. It also brings some important holidays, which perhaps this year, we'll be more prepared to observe virtually or in other appropriately safe ways. Passover comes first, and with it, a week of unleavened baked goods. That certainly won't stop us from baking, and depending on how you observe, we hope it won't stop you! But maybe you've been there and done that or have an aversion to supremely dense and fudgy cake (100% no judgment). If so, this [nutty rendition]( is a bit lighter and has some built-in dairy substitutions for you. Either cake will improve with age and go well beyond sustaining you for the week. Macaroons are another popular choice for some Passover observers, and we have you covered there too! They keep well at room temperature for days or can be frozen for longer should that be necessary to control the macaroon population in your home. Of course, Passover baking is not all about dessert. If these fit in line with the way you observe the holiday, I strongly recommend stocking up on the ingredients and preparing yourself for popover excess. They go with just about everything.
