Soul-satisfying recipes to bake your way through fall. Sunday Recipe Inspiration with Martin Batch 3

Soul-satisfying recipes to bake your way through fall. [logo]( Sunday Recipe Inspiration with Martin Batch 360 [The Easiest Rye Bread Ever]( Folks, it's coming. In recent weeks a hard frost rolled into Vermont and broke the back of late summer. It knocked our pumpkin patch flat on its face and snuffed the red and gold torches of maple and beech — we're down to bare branches. The poet Laureate Stanley Kunitz captured what's in my gut in this stanza from "End of Summer." Already the iron door of the north Clangs open: birds, leaves, snows Order their populations forth, And a cruel wind blows. The thing is, I know what Fall brings ... trips to the wood pile, short days, icy windshields. This shift, in addition to my 2020 worries, has me dreading the change of season. But don't you worry, I have a plan. Maybe you need one, too? Here's what I'm thinking. Let's double down on love. Let's pour ourselves into the things and places — warm kitchen spaces — where we feel hopeful and renewed. Let's Bake it, until we Make it. Here are some ideas. I'll see you on the other side! After months of warm temperatures and hot oven hesitation, I'm cranking the dial, setting a course for warm and crusty. [Our daily bread](, known as "Maura's bread" to my family is this adaptable [no-fuss method](. I like to use rye for the whole grain portion. In my book I wrote something like, "What does bread baking smell like in Heaven? It smells like bread baking." Aromatherapy at its best. Speaking of rye and hearty things, [Jeffrey's Sourdough Rye]( might be the sustenance you need for the coming cold nights. Warm stew, a hearty soup, a side of rye toast ... that's good medicine. And if toast isn't your breakfast jam, try these [brown butter scones](. Eaten warm with a side of black coffee while sitting by the wood stove can prepare me for a full day ... of more warm scones and coffee. Last, while strawberries have long disappeared (unless you're hoarding them frozen like the last rays of summer), we DO have late apples. [This crust]( — crisp, buttery, complex — just might convince you that rye is your super flour. Sauté sliced apples briefly then use them in place of strawberries.
