I could give you some reasonably valid excuse about how there are just too many summer baking topics to cover in a few short months. But the truth is, I am not much of a pie baker. For some reason, it has just never been my thing. That ends this year! So will you join me this week as I kick off my foray into pie baking? I could probably devote this whole week to just pie crusts, but that would only get us so far on this journey. So instead I’ll simply recommend this [All-Butter Pie Crust](. It has yet to let me down. I'll be making 2 1/2 batches to have enough pastry for the next four pies. Up first will be this [Gingered Plum Streusel Pie](. I’ve never made it, but whenever I come across it, I stop in the middle of my recipe search to admire it. Most things with streusel have that effect on me. Then, while I still have blackberries ripening outside my house faster than I can pick them, I’ll make this [Gingery Blackberry Pie]( (above). My toddler is heading out to pick the berries as I write this. How’s that for motivation?! Next up will be this [Cherry-Vanilla Cream Pie](. It’s another one I haven’t made before, but I imagine the almond-hinted custard complements the cherries beautifully. Of course, that makes me think I should round out my selection with an all-custard option. So for that I’ll bake this [Buttermilk Pie](. It’s as simple as pie baking gets and will make a beautiful spread with the others. Now, time to invite the neighbors for an outdoor, socially-distanced pie extravaganza and get baking!
