[Hero Recipe: Old-Fashioned Maine Sourdough Waffles](
Last week, the exceptional Charlotte bid you a temporary goodbye. While she's off taking care of her newest bun in the oven, I'm lucky enough to be able to spend my Sundays with you! First, let me introduce myself. My name is Posie, and I've been an editor at King Arthur for five years, happily writing all about baking, editing Sift magazine, and sneaking tastes of warm cookies in the test kitchen whenever I can.
I'm thrilled to have some weeks ahead to talk with you about baking. For me, food — and baking in particular — is a lens into one's life. It's the backdrop to the stories of who we are, the underpinning of so many memories, and a source of constant pleasure and nourishment.
I grew up on a farm in Maryland with my three sisters, raised by a mom who made us homemade bread and ice cream churned by hand with milk from our cows and pie dough from scratch. She was my first introduction to King Arthur, thanks to the ever-present red flour bag on our kitchen counter. She taught us that food is a way to communicate, to express ourselves, and a cornerstone over which to gather.
In the coming weeks, I'd like to use this space to talk about the recipes that are woven into my life — in the hopes that they inspire you as much as they've inspired me.
So let's get down to business! We 're in the midst of some cold winter weather here and I'm in a cozy comfort food frame of mind. For me, that means baking. To begin the day, I like to take time to make a breakfast that goes beyond a quick bowl of cereal or yogurt swirled with fruit and maple syrup. Myself, I go for [sourdough waffles]( — you can make, cook, and freeze batches of them ahead of time and reheat them in the oven. On the weekends when I have a bit more time, I go for [popovers](, which never cease to amaze me with their miraculous transformation from liquid batter to airy, ethereal puffs. (If you have kids, have them help and let them watch in amazement!) At midday, I find myself sticking with simple lunches of soup, and no soup is really complete without a warm biscuit. These [self-rising biscuits]( call for just three ingredients: split one, hot from the oven, and slather it with butter, letting the butter melt in golden rivulets as you take a bite. That's pure comfort. And for the ultimate in comfort food, I seek out something soft and warm and bread-based and chocolately, all in one dish: [chocolate bread pudding](. Use any leftover bread you like, although challah and brioche are ideal candidates. But comfort needn't be tied to only the rich and decadent. Sometimes the act of baking is comfort enough in and of itself, so stirring together a quick, tender [banana bread]( can be all you need to feel cozy and well cared for.
