Beat the heat this summer, and reach for dessert in the refrigerator (or freezer) [King Arthur Four]( Sunday Recipe Inspiration Batch 294 [Hero Recipe: 9099]( To be honest, I don't spend a lot of time in the kitchen during the summer. When temperatures hit the 80s and 90s, the idea of standing over the stove or pulling something out of the oven is just not that appealing. That's why we're talking refrigerated (and frozen!) desserts this week! These are the sort that require minimal oven time, and build in lots of chilling (read: relaxation for you) time. If there's ever a reason to have a couple of good base recipes up your sleeve, icebox desserts are it. Starting with any of the three [cookie pie crusts]( in this recipe can lead you to dozens of icebox pie creations. Use your imagination to fill the crust(s) to your liking (fruit, pudding, and whipped cream jump to my mind). Or, try our [chocolate icebox]( or [mocha madness ice cream]( pie recipes to fill the graham cracker or chocolate wafer cookie crusts, respectively. Both have been known to disappear quickly around here. And while we're on the subject of chocolate icebox desserts, have you tried our [chocolate wafer cookies](? They make an absolutely fantastic cookie pie crust, but they're also a brilliant starting point for icebox cakes. In fact, our recipe for the cookies discusses making refrigerated stack cakes, which I wouldn't say no to on a hot summer evening. I would also not object to this [rhubarb icebox cake](, above. Does anyone really need convincing that eating a stack of cookies covered liberally in whipped cream would be anything less than divine?
