David Tamarkin Editorial Director Dear bakers, We've got 18 days until Thanksgiving, and if you're feeling a little antsy about it, you're not alone. A lot of us are running through the database of recipes in our heads (or, ahem, [online](), weighing our options, and wishing we could just get into the kitchen and get started. The good news: We can! Over the next three Sundays, my colleagues and I will guide you through Thanksgiving prep. And yes, that prep can begin right now. Take today to order your turkey and flip through some cookbooks for [a good sweet potato recipe]( while you drink your coffee. After that, the day's real work begins: prepping your breads and pies, which can be made now and stored in the freezer until Thanksgiving. Start with the pies. For an impeccable crust, look to our [Classic Double Pie Crust](, which has butter for flavor and flakiness and a little shortening for ease and reliability. Make a batch, divide it into two rounds, wrap them airtight, and store them in the freezer until a day or two before Thanksgiving. If you're planning on single-crust pies (like our [classic pumpkin](, or this more modern [chocolate almond chess](), roll out the crusts and press them into [pie pans]( before freezing. Planning a double-crust fruit pie? You can go one step further and roll the dough out, fill it (here's our most iconic [apple pie filling](), top it, and then freeze it. All you'll have to do is thaw the pie overnight the Wednesday before Thanksgiving and pop it in the oven in the morning. For rolls, buns, and breads, the path looks a little different: You can bake these fully before freezing. When they come out of the oven, let them cool, wrap them tightly, and freeze them until Thanksgiving morning. Let them thaw on the counter, then warm them in a low oven before serving. Everybody will wonder where in the world you found time to bake bread during the Thanksgiving madness.
