By baking them in the pan (you'll need to increase the baking time slightly — aim for 23 to 26 minutes), you limit the cookies' spread, resulting in a thick, chewy chocolate chip cookie disk, just right for topping with a scoop of ice cream (maybe that's the It Dessert of Summer)? Another dessert that's on repeat in my summer kitchen is our [Iced Coffee Icebox Cake](: espresso infused cream and deeply chocolatey cookies (that are a convincing homemade replica of a now discontinued storebought chocolate wafer) are layered together and chilled until the layers meld into a sliceable cake.
