Summer Bakes Worth Planning Ahead For

Bake, freeze, reheat, repeat. This week, I'm planning out a slightly different roster of summer bakes. I'm talking about recipes you can bake or prep ahead of time and freeze until you need them. Don't get me wrong, I'm not anti-oven come summer solstice. But on hotter, longer days, I'd rather be outside instead of tending to over-softened sticks of butter and finicky yeast doughs. I'll admit my bread baking goes on hiatus once the temperatures consistently hit 80ºF, but there's still some time to fit in [Jalapeño-Cheddar Bread]( (above). And this cheesy, spicy bread is worth working into your schedule. In this case, I'll fully bake and cool these loaves and rolls, then store them in [plastic baggies]( sealed tightly with [bakery bag clips]( before stowing in the freezer. Get the proofing and shaping out of the way now and reheat them for a stress-free showstopper at your next backyard dinner party. Of course, there will be lots of pie over the next few months. Bonus points if you prep a few batches to take you all the way through stone fruit season. I plan on defrosting a few in the fridge the night before a hiking trip and reheating them the next morning for a nourishing breakfast on-the-go.
