Someone would ring a giant bell and campers would come running from all directions to see what treat awaited at the main house. These snacks were something to get excited about — it was often cake, in one form or another. Yes, really; cake for mid-morning snack! A few decades later, I'm still loving cake for a snack (or what we adults now call "snacking cakes"), especially those that have just the right amount of nostalgia baked in. Case in point, our [Jelly Doughnut Cupcakes](. When it was doughnut day at camp, I'd choose the sugar-coated variety and it would unfailingly end up on my shorts, T-shirt, and covering my face. This jelly-filled cupcake version is easier to make (and eat) than the traditional one while still showcasing classic doughnut spice, tenderness, and a sugar-coated exterior. Another favorite snack for many campers was coffeecake, which came topped with mounds of cinnamon streusel. The buttery, crumbly topping scattered the surface of the front porch once snack time was over. Today, you can find a tart, jazzed-up version with this [Rhubarb-Ginger Coffeecake](. It has just a touch of heat from the [ginger]( and is most certainly not lacking in streusel. Some days at snack time there'd be thick slices of moist, tender banana bread studded with melty [chocolate chips]( waiting to be handed out to eager campers. This [Banana Snacking Cake with Chocolate Malted Cream Cheese Frosting]( recipe takes that childhood favorite to a new level — it's elegant but unfussy, something kids will gobble up and adults will adore too. Perhaps the treat that tip-toed the line between snack and dessert the most was a chocolate muffin that came with a sprinkling of crunchy sugar on top. (What are muffins but just cupcakes without their frosting?) Our [Chocolate Olive Oil Cake]( straddles that same line: it's light and floral from the olive oil and while it doesn't have frosting, it does have a chocolate crackle topping. The snack vs. dessert boundary never got pushed so far that we received ice cream as our 10 a.m. snack, BUT we did have ice cream sundaes on a few special, hot summer afternoons. These [Cookies and Cream Cupcakes]( are inspired by that beloved frozen treat flavor. [Cake flour]( adds tenderness reminiscent of cupcakes from a bakery, and the creamy, cookie-speckled frosting looks just like the ice cream itself. Bottomline: Snack time at camp was synonymous with sugar-coated smiles. I still whole-heartedly believe that a good snack is one that brings you joy, and these snacking cake recipes will most certainly deliver on that.
