Snack Cakes that Make Kids Come Running 🍰

Someone would ring a giant bell and campers would come running from all directions to see what treat awaited at the main house. Another favorite snack for many campers was coffeecake, which came topped with mounds of cinnamon streusel. The buttery, crumbly topping scattered the surface of the front porch once snack time was over. Today, you can find a tart, jazzed-up version with this [Rhubarb-Ginger Coffeecake](. It has just a touch of heat from the [ginger]( and is most certainly not lacking in streusel. Some days at snack time there'd be thick slices of moist, tender banana bread studded with melty [chocolate chips]( waiting to be handed out to eager campers. The snack vs. dessert boundary never got pushed so far that we received ice cream as our 10 a.m. snack, BUT we did have ice cream sundaes on a few special, hot summer afternoons.
