Dear Hipster Cooks, This month I've put together an entire article and recipe series to explore the differences, limits, and benefits of using the Instant Pot MINI - or really any 3qt/lt sized pressure cooker. The recipes have been tested to work in a cooker of any kind and size but were filmed using the MINI to let you see how much (or little) food can fit inside. One of the recipes, the Butter Chicken, was inspired by a question I saw about on the Pressure Cooking Reddit - from a frustrated cook looking for advice on getting flavor from the frozen chicken breast using the pressure cooker. I was already preparing a chicken recipe for this series and decided to use the ever-popular frozen chicken breast. The recipe describes what elements keep the meat moist and flavorful along with addressing the flaws in popular Butter Chicken recipes. So, even it doesn't sound appealing, you might find some useful info there to use in creating for your own recipes. Lastly, the Pressure Cooking Times tables have had a major revamp with the addition of cooking time specifically for the Instant Pot MINI - and other lower-pressure electrics (details on the changes, below).
