Hi everyone! Iâm popping in today to share a new pumpkin cookie recipe that I recently created and simply could not keep to myself. Letâs just say my kids were in heaven when I was in the testing phase of these cookies, not to mention Eric. ;) I definitely went through a bit of a âburned outâ phase (correction, a really burned out phase) after finishing up my new cookbook, and I think my family missed the daily cookbook/blog/app recipes churning out of this kitchen! Perfect Little Pumpkin Cookies with Fluffy Pumpkin Pie Spiced Buttercream

These vegan pumpkin cookies are lightly crispy around the edges, tender and chewy in the middle, and the perfect light-tasting base for my Fluffy Pumpkin Pie Spice Buttercream! My recipe tester, Nicole, says they are like âairy, pumpkin spiced clouds!â If you arenât in the mood for frosting, and prefer a lightly sweet, wholesome-tasting cookie, they also taste great without the buttercream.

Charitable initiatives spotlight
Occasionally, weâd like to spotlight inspiring community-based initiatives that are making a difference in the lives of others. Below are two that weâve recently supported.
Building Roots
We recently learned about [Building Roots]( and are so inspired by the incredible things their team is doing for the Moss Park community in Toronto. Building Roots was founded by Lisa Kates and Darcy Higgins. In addition to its regular community outreach programs, Building Roots aims to provide and deliver fresh produce and hot meals for the most vulnerable in the community. This summer, we donated 120 plant-based meals through Tiffinday, the local food business who provides Building Roots with healthy hot meals, to help contribute to this beautiful cause.
Food Love
Our team also connected with Kimberly Barnes, creator of [Food Love]( which is a wonderful US-based initiative. Food Love provides safe delivery of healthy plant-based hot meals and fresh groceries to those who are disproportionately affected by Covid-19 and who often canât access food banks.
