Hi everyone! I’m popping in today to share a new pumpkin cookie recipe that I recently created and simply could not keep to myself. Let’s just say my kids were in heaven when I was in the testing phase of these cookies, not to mention Eric. ;) I definitely went through a bit of a “burned out” phase (correction, a really burned out phase) after finishing up my new cookbook, and I think my family missed the daily cookbook/blog/app recipes churning out of this kitchen! This summer, we donated 120 plant-based meals through Tiffinday, the local food business who provides Building Roots with healthy hot meals, to help contribute to this beautiful cause. Food Love Our team also connected with Kimberly Barnes, creator of [Food Love]( which is a wonderful US-based initiative. Food Love provides safe delivery of healthy plant-based hot meals and fresh groceries to those who are disproportionately affected by Covid-19 and who often can’t access food banks.
