Welcome to high summer. All the seasonal cues are popping here in Vermont: the heavy humidity, the maple creemees, the swirling clouds of mosquitos. And, of course, the best signal that summer has begun: the aroma of grilled burgers and dogs in the air. But they're not all grilled. If you've been following along, you know that I'm on Team Ooni this summer, making everything from pita to bagels and even baguettes (and much, much more) in the outdoor oven. In keeping with that theme, I've been using it to make burgers, too — pizza burgers. Today, I'm going to show you how to do the same. This week's assignment Make a pizza-themed smash burger in the Ooni (and serve it on a homemade bun). [Get the Recipe]( [hero]( 1. Put the pizza IN the burger The perfect pizza burger begins with a flavor-packed patty. While many folks like ground beef (a minimum of 80% lean to avoid flare-ups), “burger” has come to include plant-based options that won’t have you asking, "Where’s the beef." Season the burgers with our [pizza seasoning]( for a quick option, or grab a combination of dried basil, oregano, black pepper, salt, and chili flakes to taste and mix to combine. Form into large balls weighing three to four ounces (about 80g to 110g) each and preheat the Ooni to between 600°F to 700°F. [Get Yours]( [hero]( 2. Add some crunch While the oven preheats, make a frico layer for the burger that emulates the classic lacy cheese edge you find on Detroit and other styles of pizza. To a dry but seasoned cast iron pan, add grated parmesan (the pre-grated works fine!) in piles, about 1/3 cup (20g) each. Spread the cheese thinly and evenly to form a circle, 3 " to 4" in diameter. Load the pan into the preheated Ooni, turn off the heat, and bake for 4 to 5 minutes, until the edges are browned. Watch closely! Remove the frico patties with a thin spatula and place on a rack to cool and set until crisp. [hero]( 3. Stack it up Heat the Ooni oven back to 600°F or 700°F. Once hot, heat a large cast iron pan (empty) for 5 to 7 minutes. Once heated, remove the pan and add two to three of the balled patties and return to the oven. Cook for 1 to 2 minutes (in their round form, don't smash them yet). Once the burger has just begun to cook, remove and smash the patties flat and return to the oven. Cook to your desired doneness, then add some cheese, some red sauce, and whatever else you like on your pizza. (Pineapple and jalapeños? Go for it.) Return to the oven briefly to melt the cheese. Your pizza burger is now ready to eat! Stack the frico with the cheese-and sauce-topped patty, finish with a drizzle of basil oil (or fresh basil), and let summer truly begin.
