But if you're going to make it on Juneteenth, a holiday that celebrates the emancipation of enslaved people, the cake itself is only half the story. The other half — the more important half — is the red glaze. "The color red is really significant for a Juneteenth cake," Mack says. For her the color represents multiple things, including the red stripe of the pan-African flag and the blood that was shed in the slave trade. Most of all, "it really is the visual representation of the power and strength we have as African Americans." A number of red fruits can be used to flavor and color the glaze. The juice of raspberries, cherries, and red plums all work, as does puréed watermelon. (One reason why Mack likes using the latter is because it helps reclaim watermelon from racist tropes.) No matter what fruit you choose, a little [natural red food coloring]( can be added to the glaze to make it extra vibrant. "I developed this cake as a centerpiece," Mack says, and it is certainly that — of any gathering, but especially on Juneteenth.
