Flaky layers with fruity jam tucked inside. [Take 15% off orders over $75!]( [logo]( [hero]( These pastries are jam-packed Dear Bakers, Ever since Jordan Smith created his [signature layered scones](, people have been asking for the recipe. It's easy to see why. They're scones that contain multitudes: they're somehow both rustic and elegant; new and familiar; flaky like pie dough, and stacked with jam like a layer cake. Not that any of that was the idea when he created the recipe. Jordan, the pastry baker at San Francisco's Automat, knew he loved scones. He knew he loved putting jam on his scones. But, he wondered, "Could I put jam in the scone?" After a little experimenting, he found that he could. The way he went about it is key. He could have swirled some jam into the dough, but, he says, "I liked the idea of having some bites be more scone, and other bites be more jammy." Also, while a swirled scone sounds pretty, it's the layering that gives these scones their flakiness, and the clear delineation between fruit and dough. When our Test Kitchen director first saw these scones — via Jordan's Instagram, naturally — she knew she had to have them. So she asked him for the recipe, which he finally shared with her — and now, with all of you. [The version we've just put on our site]( features cornmeal, rosemary, and fig jam, but once you nail the method of these scones you can layer them with whatever jam you like. Just make sure the jam is thick (give it a simmer to thicken it up if needed), the scones are cold when they go in the oven, and don't be stingy with the [Sparkling Sugar]( (it, and everything on the site, is 15% off right now — all the more reason to be generous with the stuff).
