Artichokes, a mainstay at farmersâ markets, are often steamed. Trust us, roasting is the best approach for accentuating their nutty flavor. A bit of knife work (reach for that new santoku!) before roasting will lead to more concentrated flavorâand eliminate the messy scooping work at the table. 1. TRIM TOP AND BOTTOM: Using sharp knife, cut away most of stem, leaving about 3/4 inch attached. Cut off top quarter of leaves. [Step 2](
