My team and I come up with two different dishes from two different parts of the world. My job is to make them taste delicious together. I feel like a culinary Sherlock Holmes. One of my favorite cases to crack? [French Onion Soup Mac & Cheese](. This took me a few weeks to get just right. At first it wasn’t cheesy enough. Then it wasn’t soupy enough. After re-evaluating, I figured it out. Concentrate the French onion soup. Caramelized onions (patience, my friends!), thyme, and beef broth were all cooked down until rich and almost jam-like. Then I added milk, of course, plus a combination of Gruyère (French onion soup–approved) and Monterey Jack (perfectly melty). Finally, a teaspoon of Dijon mustard brought the entire dish together.
