The santoku has long been the Japanese equivalent of a chefâs knife; it gained attention in America when Rachael Ray talked it up on national television as her favorite all-purpose knife.
Compared with a classic 8-inch chefâs knife, the santoku is typically shorter and has a thinner blade, a stubbier tip, and a straighter edge. The style was developed for postwar Japanese home cooks as a more versatile alternative to vegetable cleaversâsantoku means âthree virtues,â which are described variously as âmeat, fish, and vegetablesâ or âchopping, slicing, and dicing.â We found a santoku knife that gives our favorite chefâs knife a run for its money (and costs less than half the price of similar santoku knives).

Thanks to its sharp cutting edge and skinny spine, this knife produced razor-thin slices and broke down a whole chicken and cut carrot matchsticks âlike butter.â Its wooden handle felt a hair too thick and bulky to testers with smaller hands, and its blade was on the shorter end of what we prefer.

How We Tested Santoku Knives
We tested 10 santoku knives, priced from $24.99 to $199.95. We used the knives to mince fresh herbs, dice onions, butcher whole raw chickens, and quarter unpeeled butternut squashes. Then to see if santokus add unique value to a knife collection, we tacked on precision work: cutting carrot matchsticks and slicing semifrozen strip steaks across the grain into slivers. Finally, six testers, including three self-described knife novices, chopped onions and rated the knives, including how well each model performed and if it was comfortable and easy to use.
Get a grip
A great kitchen knife almost leaps into your hand, feeling natural, ready to work, and effortless as it moves through food. A knifeâs handle, weight, balance, and blade geometry all contribute to the user experience. High marks went to handles that felt substantial but not bulky, were neutrally shaped so that they afford a variety of comfortable grips, and were made from lightly textured materials that offer good purchase.
Blade runner
A truly sharp blade is the key to any kitchen knife. The angle of the bevel—the slim strip on either side of the blade that narrows to form the cutting edge—helps determine the sharpness of that edge. Nearly all the blades tested were the expected 15 degrees, a standard angle for Asian-style knives. The top edges, or spines, of our top-rated knives were all thinner (2 millimeters or less) than lower-rated models. Knives with narrower spines felt more like razors gliding through food and less like wedges prying it apart.
Rocking bottom
Originally a santoku knifeâs straight bottom edge was conducive to straight-down slicing, not to a Western-style rocking motion which is effective and comfortable for mincing herbs. But newer models, including most of the ones we tested, feature gently curved bottom edges that allow for subtle rocking motion.
