Roasted Butternut Squash with Baby Spinach & Cranberries
The Perfect Roasted Veggies for Your Holiday Table

It’s mid-November and that means we've officially entered the holiday season! With Thanksgiving less than two weeks away, I've been working with our Meals & Recipes team to make sure we're doing everything we can to help you serve the perfect meal. There's so much that goes into planning your Thanksgiving dinner, but today I want to focus on what some consider to be the tastiest part of the meal: the side dishes. Mashed potatoes and green beans are holiday classics, but we can't talk about sides without talking about our #1 rated recipe: [Roasted Butternut Squash with Baby Spinach & Cranberries.]( Fun fact, this dish was originally only available in our prepared foods department. Everyone liked it so much, we started sharing the recipe back in 2005 and it makes us so happy that it’s become a tradition for so many of you. To make this family favorite, you simply season the squash and red onion with [basting oil,]( salt, and pepper, roast for thirty minutes, then toss with dried cranberries and baby spinach. The flavor you get has just a touch of sweetness, which pairs perfectly alongside savory turkey and gravy. The [roasting technique]( used in this recipe has an interesting backstory, too. Years ago, the chefs in our test kitchen set out to perfect a technique that would help anyone be successful at home with virtually any type of veggie. Through trial and error, they found that 400° is the perfect temperature. Cooking times vary depending on what you’re cooking, but you’ll know your veggies are done when they’re caramelized and tender enough to be pierced easily with the tip of a knife. Our chefs like to share a great, timesaving trick they use to simplify Thanksgiving Day—roasting your veggies the night before. You chill them overnight and once the turkey comes out of the oven to rest, you pop your veggies back in to warm through.
