It's a go-to for me because it's super easy and because it lets people make their sandwiches exactly how they like them. Interestingly enough, we went years without having a pulled pork recipe at Wegmans because we only wanted to offer one that we really loved. We knew we wanted that smoky, tender, fall-off-the-bone pulled pork like you get from using a smoker, but we know most people don't have one handy. So, we tried multiple methods in our Test Kitchen until we discovered the next-best thing—the oven. And that's when our [Slow-Roasted BBQ Pulled Pork]( recipe finally became a reality. Now, you probably noticed I didn't say anything about a slow cooker. While technically you can make pulled pork in one, our oven method takes no extra work or time, and the end result is so much better. More on this later. Please don’t panic when you see the recipe says 20 hours of total time. The only real work happened last night when I prepped my pork by scoring the top in a diamond pattern, coating it with mustard, and then seasoning it with a mixture of paprika, salt, and our [Sweet & Smoky BBQ Seasoning Shak'r](. After a night in the fridge, I popped it into a 275° oven first thing this morning. And now I'm left with what is actually the hardest part of this recipe: ignoring the rumbling of my stomach while I smell it cook. Scoring the pork created crevices for the fat to render while it cooks, and it'll leave us with irresistible crunchy bits all along the top that are fought over in my house. You can't get that texture in a slow cooker. That's why the oven is our friend today. If I've timed it right, my pork should be done just before kickoff. Instead of shredding it and slathering it with sauce, I'll serve it whole and let my guests pull off what they want. Our [Carolina Gold BBQ Sauce]( is my favorite with this—its tangy mustard base helps balance out the richness of the meat. To finish things off, I'll make some [Coleslaw]( heat up a can of [Memphis Baked Beans]( and toast the [slider rolls](.
