That means I'm regularly on the lookout for recipes that make lots of great leftovers. When our kids started daycare, my husband and I made a pact to try to bring our lunch to work versus going out. Sure, we'll make sandwiches or pack some soup from time to time, but more often than not, you'll find what's left from last night's dinner in our lunchboxes. Sunday is always my meal prep day, so it plays a big role in what we'll be bringing for lunch over the next couple of days because today is also when I cook my biggest meal of the week. And while that cooks, I chop, slice, and dice as many ingredients as I can for the dinners we have coming up during the week, so they're in the fridge ready to go. On today's list is [Pasta with Escarole, Beans & Pork Sausage,]( one of our all-time favorite one-pot meals for a great dinner and amazing leftovers because it reheats so well. We love all the rich, garlicky, slightly spicy flavors (think greens and beans, but even better), and it comes together for as low as $4 per serving because it's made with so many items I already have in my pantry. This recipe makes six servings, which means we'll get tonight's dinner and a few lunches throughout the week for less than an hour spent in the kitchen. Not a bad return if you ask me.
