Sheet Pan Garlic Herb Chicken with Yogurt Sauce

One sign of a truly great meal is if it can transport you to another place or time. Imagine with me (I'd tell you to close your eyes, but you'll need them to read this) that you're somewhere along the Mediterranean coast. The weekend is coming to a close, the sun is getting ready to set, and the whole family is gathering around the table for Sunday dinner. You can smell the juicy, perfectly seasoned chicken as it's getting pulled out of the wood-fired oven after slowly roasting al forno style for hours. The rest of the table is getting filled in with hearty sides and maybe some crusty bread with salted butter, and the vino is being poured. The next few hours are devoted to savoring a delicious home-cooked meal while spending time with your loved ones. Sounds great, doesn't it? But as we're getting back into the rush of our fall routines, you're probably thinking, "Thanks, Chef. Who's got time for that?" Trust me, as a dad myself, I get it. But what if I told you that you can cook a meal like that any night of the week? One of our newest recipes out of the test kitchen, [Sheet Pan Garlic Herb Chicken with Yogurt Sauce]( helps you achieve that weekend roast-type flavor in a fraction of the time by using the right ingredients and a few simple techniques. So, remember, our goal is to emulate that beautifully roasted Mediterranean chicken but transform it into a weeknight meal that's on the table in less than an hour. And we do that by considering how to get the most out of each ingredient. Instead of cooking al forno, we're going with a sheet pan for its simplicity, and for easy cleanup. We want crispy potatoes, so we're cutting them into wedges and throwing those in the oven first along with some sliced red onion. The red onion is going to give us a deep, acrid-type flavor that we love in this dish. After that's had a chance to start crisping up, we add chicken thighs to our pan and put it under the broiler. The broiling gives us the caramelization that we like. Everything is generously seasoned with olive oil and our [Garlic Herb Seasoning Shak'r](. For me, the cherry on top of this dish is the yogurt sauce (Greek yogurt, lemon zest, and more Garlic Herb seasoning) because it adds brightness and acidity to balance the richness of the dish. And it can all be made for as low as $2.50 per serving. If you're in the mood for a glass of wine, I'd serve this with a dry, fruity white like Golden Gate Cellars Sonoma Coast Chardonnay.
