For me, that's typically an Italian dish—homemade ravioli, Sunday sauce, or one of my other favorite recipes that take hours for the flavors to meld together. But this week, as my four kids are heading back to school, I'm thinking about lessons learned from mom. On a trip to Italy years ago, I wanted the most authentic experience of all: a busy Italian mom's real cooking. So, I joined our Italian Classics pasta supplier, Antonio Marchetti, and his wife at their home. I marveled at how easily she tossed together our dinner with just a few ingredients and how delicious the results were. That experience got me thinking about my own mom, the "casserole queen." She made just about everything in one dish growing up. As a young boy stuck with dish duty, I appreciated not having to scrub several pots and pans, but the simplicity of the preparation was lost on me until I had a family of my own. As a chef, my instinct is to take a recipe and build it up. But as I learned in an Italian kitchen and my own mom would remind me, a recipe prepared with simple ingredients and basic techniques can taste just as great as one that takes hours. One example of this that's a go-to in our house is [Mom's Eggplant Parmesan Casserole](. It comes together in about 15 minutes, so it's about as school night friendly as it gets.
