Good morning,
Something you may not know about me: I took a brief detour from local news to cover the business of the snack industry, which was as great and delicious as it sounds. So needless to say, I'm a big fan of snacking. And during quarantine, I've developed a newfound love for a snack I really didn't care for during my trade show days: seaweed.
My sister and I have been eating our seaweed snacks with sriracha tuna salad and cucumber – we both highly endorse it. But Here & Now resident chef Kathy Gunst has some other creative ways to eat seaweed and shares some [tasty recipes]( including a cucumber-miso kelp dip and grilled corn with seaweed butter.
Here are some other interesting facts Gunst shared about the lettuce of the sea:
1. Seaweed is really good for you. It’s loaded with potassium, magnesium, Vitamin B12, iodine, omega-3 fatty acids, antioxidants, and tons of calcium.
2. The largest commercial seaweed farm in the U.S. is in Maine. The business is helping lobstermen diversify their business.
3. Dried seaweed will keep for months but once opened it should be stored in an airtight container for a few weeks. Seaweed can also be frozen for several weeks.

Catch Up On Coronavirus
What To Know About Coronavirus In Mass. Today: The state is [investigating]( at least eight new clusters of the virus, many of them linked to large social gatherings where people did not follow virus safety rules like wearing face masks.
"The ask is relatively small," Gov. Charlie Baker said during a press conference yesterday. "Wear your masks, respect the virus and don't do these large gatherings that can be superspreader events."
Also: Mayor Marty Walsh said yesterday that Boston will not start schools with entirely in-person learning. We expect more details on the back to school plans in the near future.
