Tomorrow will be in the low to mid 80s. Good morning, Something you may not know about me: I took a brief detour from local news to cover the business of the snack industry, which was as great and delicious as it sounds. So needless to say, I'm a big fan of snacking. And during quarantine, I've developed a newfound love for a snack I really didn't care for during my trade show days: seaweed. My sister and I have been eating our seaweed snacks with sriracha tuna salad and cucumber – we both highly endorse it. But Here & Now resident chef Kathy Gunst has some other creative ways to eat seaweed and shares some [tasty recipes]( including a cucumber-miso kelp dip and grilled corn with seaweed butter. Here are some other interesting facts Gunst shared about the lettuce of the sea: 1. Seaweed is really good for you. It’s loaded with potassium, magnesium, Vitamin B12, iodine, omega-3 fatty acids, antioxidants, and tons of calcium. 2. The largest commercial seaweed farm in the U.S. is in Maine. The business is helping lobstermen diversify their business. 3. Dried seaweed will keep for months but once opened it should be stored in an airtight container for a few weeks. Seaweed can also be frozen for several weeks.
