Cooks, servers, and bartenders have all faced a grizzly 2020, but so have the people who get up on stages large and small. The effects of ongoing lockdowns and restrictions are rippling throughout the drag community as in-person shows, many of which are held in small, densely-packed bars, are all but canceled for the foreseeable future. Drag performers are legendarily multi-talented: experts in makeup, costuming, dance, lipsynching, and a healthy handful are equally talented behind the bar as they are on the stage. Gorgeous comedy queen [Ruby Roo]( is one of New York Cityâs elite drag bartenders, known for smart conceptual shows and a big, mouthy attitude. I caught up with her to chat about the current plight of the industry, how to recommend drinks to customers, and a Fireball-based cocktail thatâs a dead ringer for a peach cobbler. Surfers looking for a cheap place to park their van, retirees seeking to extend their pension dollars, fugitives, beatniks, artists: They've all been called to Mexico for one reason or another. And most of them end up staying for a while. I heard the call five years ago, and have lived here ever since. I moved to Mexico to study Spanish and teach English after falling in love with the country two years earlier. While I eventually started writing and translating, my story started pretty typically: I came to Mexico with a few suitcases and a one-way ticket, and decided to stay. [] [Let's Go]( [(

Though I wasnât being exposed to anything top-tier, I developed a love for the earthy spices and began to incorporate those flavors in my early days of cooking. Iâve found that chutney, the Indian condiment thatâs often seen accompanying naan, is a great thing to use when thickening a curry. But after speaking with Executive Chef Sujan Sarkar of Manhattanâs [BAAR BAAR](, I was surprised to learn of chutneyâs many non-traditional uses. And unlike its cousin [achaar](, which requires a more laborious pickling process, chutney can be made quickly and in many different waysâfresh or cooked; sweet, tart, or spicy.
