This week we saw lots of stocks that soared sky-high, but a pause or pullback is inevitable. It's wise to assess your risk and ensure you're comfortable with your account's positioning. While the market may continue to climb, it's essential to be prepared for downturns. So let's take a look at these companies making headlines from Friday! NVIDIA: Nvidia's shares dipped by almost 5% COSTCO: The stock dropped by 7% following the warehouse club's announcement of $58.44 billion in revenue for its fiscal second quarter. DocuSign: The stock rose 4.8% after exceeding fourth-quarter earnings. [Full List Here](=) Indices Outlook ðð Let's dive in!! Friday's volatile price action sent some ripples through the markets. The S&P 500 and the Nasdaq popped higher at the open just to see the bears take control and force a BIG reversal throughout the day. All the indices sold off in a major reversal with increased volume driving the selloff. A lot of the selling was sparked by Broadcom's earnings, (reported Thursday after the close) and specifically, the outlook they gave looking for the next quarter. This reaction leaked over to NVIDIA and other tech companies who mostly saw major reversals on increased volume as well. So what does all this mean for your portfolio? Well, we've talked about riding the uptrend until we start seeing signs that a pullback/profit taking is starting to happen. Friday's reversal could be the catalyst to start that deeper pullback. With that said, and with some caution in mind, we also like to look for opportunities when these downswings occur. We will watch for support levels to fail (or hold), same with trend lines, etc. so we can determine if this is a deeper pullback or just a few days of selling before the uptrend rages on. Because let's be real, the market's wild, but your dinner doesn't have to be! Redemption Roast The Pirate's SHOW STOPPING, Beyone-Next-Level (redeem yourself) Sherry Shallot Pot Roast Ingredients: Rub: 2 tsp fennel seeds 2 tsp freshly cracked black pepper (or whole peppercorns) 4 tsp kosher or Maldon salt 3 Tbsp shitake mushroom powder ** Roast: 1 (4 to 4 ½ lb) chuck roast, tied Olive oil 10 large shallots peeled and halved 8 cloves of garlic peeled and smashed 1 cup dry or extra dry sherry 2 cups low sodium beef broth (plus some more if needed) 5-7 sprigs fresh thyme (tied with twine if you have it) 3 bay leaves 3 Tbsp all-purpose flour 2 Tbsp very soft unsalted butter 1 tsp sherry vinegar (and certainly more to taste) Fresh dill Fresh parsley leaves Lemon juice Fresh horseradish root, peeled **Not ONE of the fancy grocery stores I visit carry mushroom powder! (Iâd never before used it in my cooking before this âRedemption Roastâ recipe. So, I had to order it on Amazonâ¦the one I found is shiitake mushroom powder. Absolutely essential for this recipe!) Directions: 1. The night before you want to cook the roast, add fennel seeds (and whole black peppercorns if youâd like) to a mortar and pestle or spice grinder. Crush into a coarse powder. Mix with mushroom powder and salt. 2. Season the roast all over with all of the spice mix. Transfer to a wire rack lined sheet tray and let sit in your fridge uncovered overnight. *Important!* 3. The next day when you are ready to cook, preheat the oven to 325 F. (in the SLC altitude of around 4,200 feet, I adjusted this to 335 F⦠adjust accordingly). Before pre-heating, take the roast out of the fridge and sit it on the counter (I do this for approx. 1 hour) 4. Coat the bottom of a large dutch oven with olive oil and heat over medium heat until hot. Add in roast, and sear on all sides until deep golden, about 5-7 minutes per side. (this means both of the big sides, and ALL of the smaller sides!) This takes a while so just be patient! Also important: adjust heat as needed to make sure the bits at the bottom of the pot arenât burning. 5. Remove meat from the pot, and rest on a plate. Add in shallots, cut side down, and char, about 3-4 minutes. Add in garlic and cook 1 minute longer. 6. Deglaze with sherry and scrape up any brown bits from the bottom of the pot. You arenât looking to reduce the alcohol here. 7. Add in beef broth, thyme, and bay leaves (I tied up my thyme and bay leaves together with a little string, this was my first time doing so! Why? Because it was easy to find and discard later!). Bring to a simmer and add the roast back into the pot, with all/any accumulated juices on the plate. Nestle it in between the shallots and garlic. The liquid should come up about halfway up the side of the meat. (Add more beef broth if needed to do so) 8. Cover and bake for 3-4 hours until fork tender. (I leaned more to the 4-hour mark because of our altitude, etc) 9. Transfer meat from the pot to a serving platter and remove twine from meat. Find and discard your thyme and bay leaves. 10. With an immersion blender, blend everything in the pot into a nice smooth sauce. Turn the heat on low. 11. Mix the butter and flour until smooth. Then, add this mixture (called a âbeurre maniéâ) into the sauce and whisk it in until combined. Bring to a gentle boil and cook while whisking, until thickened slightly. 12. Stir in sherry vinegar and season to taste with more black pepper and salt if needed. 13. In a separate bowl, first coarsely chop your dill and parsley leaves, then add in a touch of lemon juice, mix this a little with your hands. 14. Using two forks, break up the pot roast into large chunks thatâs on your serving platter. Top with some of the sauce and the dill/parsley/lemon salad. 15. Finely grate a bunch of fresh horseradish over the entire roast. 16. Serve with the remaining sauce on the side. I hope you enjoyed this edition of "The Fogcutter".
