[See Full Article](=) Indices Outlook 👀📈 This week will be a decisive and telling week for the markets. Since the S&P 500 put in the bottom of 4,103 on 10/27, it made an impressive rally up to the 4,793 high on 12/28. (Almost a 17% increase!!) This type of explosive move higher almost always leads to some profit taking, which we saw last week. The selling/drop last week was controlled, on lighter volume, and was looking like a textbook "pull back" that could set up for the market to make its next push higher. The S&P 500 and Nasdaq are starting the week with the bull horns showing and an impressive bounce today. (The Dow isn't participating mainly due to Boeing, which makes up 4.3% of the DJIA, and it being down around 7% as I'm writing this) Since early November, we've been building more and more of a bullish outlook. We will be watching closely to see if the market can continue to push higher, break the resistance levels of 12/28, and push further to set new highs. Or, we could see this buying flame out and recognize the need for a deeper pullback. This week should give us the answer to that question as we come into the start of Earnings Season. Because let's be real, the market's wild, but your dinner doesn't have to be! Pirate's Shepherd Pie The Filling: 2 Tbsp Olive Oil 1.5 to 2 lbs grass-fed ground beef 2 medium carrots (grated) 1 large white onion (grated or finely diced) 2 stalks celery (finely diced) 8 oz baby bella or white button mushrooms (finely diced) 4 cloves garlic, peeled and minced 1/2 bag frozen peas Fresh rosemary (several sprigs) Fresh thyme (several sprigs) Add more herbs from the garden! Kosher or sea salt Freshly cracked black pepper Worcestershire sauce (several splashes) Tomato Puree or paste (small can) Red wine (Pinot Noir or Chianti, several glugs) 1/2 cup chicken stock The Mash: 1 1/2 lbs golden potatoes 1/4 cup heavy cream 3 1/2 Tbs unsalted butter Salt Pepper 2 egg yolks 1/4 cup Parmesan cheese (minimum) Directions: Dice the garlic. Separate your herbs from the stems. Separate the egg yolks. Peel and slice your potatoes into even pieces. Open your wine if it's not already. Open your can of tomato paste. Cooking the potatoes: Boil some water, add in salt, set a timer for 15 minutes. Start on your filling. When the timer goes off, take your potatoes out and strain the water. Put potatoes back into the pan, or into a medium mixing bowl. Mash the potatoes with their ingredients from above and keep warm (your filling should be done by this point). Cooking the filling: Pour olive oil into a hot, rather large pan, then add meat. Stir meat as if your life depends on it for a few minutes so it's nice and brown, broken into very small pieces. Add your rosemary, thyme, garlic, then stir some more. Quickly add your carrot, onion, celery, mushrooms and frozen peas, stir a little longer. The idea at this point is to get everything to a minced consistency. Add worcestershire sauce, stir, add tomato puree, stir, add red wine and sweat down for a minute or two. Add chicken stock and cook for 3 more minutes. Final instructions: Scoop your meat mixture into a deep casserole or other oven safe dish (I use a round, thick ceramic dish), and then spoon the mash over the top. Spread the mash over the top of the mix with the bottom of the spoon and then sprinkle a generous portion of Parmesan cheese over the top. Poke the top with a fork several times to give it a peaked look and stick it in the oven at 400 degrees for 18-20 minutes to brown the potatoes and set the pie. Serve it up and watch people freak!
