We spoke with Proprietario Frank Giustra about his inspiration, his love for Italy, and the practices that make their olive oil truly sublime. TASTEMADE: What inspired you to start Domenica Fiore, and what sets your brand apart from other olive oil producers? FRANK GIUSTRA: Orvieto has been a favorite place to visit for many years and on one such visit around 2007, I experienced fresh olive oil for the first time in my life and it was like nothing I had ever experienced. It was the color of emeralds, the aroma was pungent and the flavors were like fresh cut grass and wild mint. It was sublime. When I walked the land and found sea shells in the soil I knew I had come across something extraordinary. So I bought the land and committed to producing the best olive oil in the world. And we have done that through a commitment to protecting the land, harvesting methods that create the highest quality olive oils rather than the highest volume along with a patented bottling technology that preserves freshness. And we have the global gold medal awards to show for it. This is a labour of love for me and I am passionate about the quality of our products. Can you share the story behind the name "Domenica Fiore" and what it signifies for your brand? Domenica Fiore is an homage to my late mother, for whom the brand is named. The original Domenica loved to cook for her family and it is she who gave me my love for cooking with the finest ingredients and the Italian way of life. And that really is what Domenica Fiore personifies — togetherness around the kitchen table with simple, fresh ingredients. That’s La Dolce Vita in my mind. What criteria do you use to ensure the highest quality olives for your olive oil? All of the olives in each of our extra virgin olive oils are Domenica Fiore estate grown olives. We don’t buy fruit from elsewhere. And the Domenica Fiore estate is located on an ancient seabed 400 meters above sea level. When you walk our fields you’ll find sea shells and shell fossils. This makes our soil incredibly mineral rich, unique, and perfect for growing olive trees that produce nutrient rich fruit. Domenica Fiore focuses on sustainable and eco-friendly practices. Could you elaborate on some of the initiatives and values that drive your sustainability efforts? Domenica Fiore lands are all certified organic. We use no pesticides and we rely on 80% rainwater to nourish our trees. We believe deeply in protecting our land and cultivating what it provides naturally rather than manipulating it to provide something more or different. What is your vision for the future of Domenica Fiore? I want to share what best quality olive oil is with the world. I want consumers to be educated about what goes into making high quality extra virgin olive oil and how important it is for your health. The best way to understand it is to come [visit us in Orvieto]( We would love to see you there and have you experience what goes into our products.
