Nothing is worse than coming home after a long day… And spending 1 hour+ prepping and cooking your dinner… Just to mess it up SO bad that you have to dump the whole meal in the trash! Here’s one of my recent frustrating meal fails: I was pumped to try out a new Thai green curry recipe I found on Pinterest. The chicken marinated in a mix of lime juice, lime pepper, green curry paste, and coconut milk overnight. The rice just finished soaking. And the veggies were prepped. It’s showtime! I loaded the rice into the pressure cooker, added kaffir lime leaves, placed the chicken on top, dumped in the marinade juice, and fired it up. When I came back to check on it 30 minutes later… It was barely warmer than room temperature! Somehow the curry was so thick it wouldn’t actually come to a boil!! Unfortunately, it wasn’t safe to eat because there was raw chicken in it and I couldn’t get it warm enough without burning it 😞 Dumping that whole pot into the garbage was a BUMMER!!! So don’t feel bad about your food fails! Seriously, it happens to all of us. That’s why I wanted to share 6 of the biggest mistakes new cooks make, so you don’t have to learn them the hard way like I did 😂 MISTAKE #1: Not reading the whole recipe If you don’t read a recipe closely it could ruin your dish. For example, If a recipe says "1 cup walnuts, chopped" this means measuring 1 cup of whole walnuts and then chopping them. But "1 cup of chopped walnuts" means that you would chop the walnuts before measuring. That’s why it’s important to read through the whole recipe before you start - because it will limit the number of mistakes like that you’ll make! If there’s an ingredient you forget, or a step of the recipe you don’t understand, then it’s better to sort that out before you start cooking! Otherwise you run the risk of messing up a key step, or overcooking the food while you figure something out. MISTAKE #2: Overcrowding the pan Wish I knew this before I made my green curry!! Adding too much food at once actually lowers the temperature of the cooking area. (The bottom of your hot pan, or dish.) This causes your food to cook unevenly. The result? Soggy food that won’t brown. Won’t heat through. (Like what happened to me! RIP curry) Burnt food on the bottom. MISTAKE #3: Uneven cutting sizes Ever pulled out a pan of roast veggies where ⅓ was burnt, but the rest was perfectly done? Your food just can’t cook evenly when cut to different sizes. The smaller pieces cook faster, with more potential to burn - and larger pieces don’t get cooked through! Cutting meats or vegetables to a consistent size can be a challenge, but it’s the best way to make sure your food cooks evenly. MISTAKE #4: Using a cold pan Sometimes when you’re in a hurry, you turn the heat on… Add oil… Toss some onions in the pan to sauté, anddd… Nothing. No sizzle! A hot pan is critical to sautéing veggies, and creating a great crust on meat. Weirdly enough, hot pans also prevent food from sticking! You want the pan to heat up before adding your cooking fat, or food. MISTAKE #5: Putting wet food onto heat Have you ever put spinach into the pan, and had to dodge boiling olive oil? That happens because there’s still water on the food. A hot pan is key to browning veggies, and searing meat - but when your food is wet the outside steams instead of browning! MISTAKE #6: Checking on your food in the oven It’s very tempting to see how the food is doing, but every time you open the oven door you’re changing the temperature! Try using the oven light instead, and keeping the door-opening to a minimum. If you have to open the oven to check on the food, try to do so towards the tail end of the recommended cook time.
