Italy’s farinata becomes the crust for a savory tart No images? [View Online.]( [Saveur]( 07/31/2019 [Image]( On [The Way We Cook]( this week, test kitchen manager Kat Craddock turns the farinata—a savory chickpea pancake that also goes by the names socca, torta di ceci, or fainâ depending on where you are in the French or Italian Mediterranean—into a sensational summer vegetable tart. While the dish is usually served plain as an appetizer at restaurants or a snack at outdoor markets, it also makes a wonderful vehicle for toppings, almost like a pizza. And because it’s made with chickpea flour, it’s gluten-free to boot! Here, the simple make-ahead batter is baked into a thinner layer, creating a sturdy base that’s crisp on the outside and pillowy on the inside. Meanwhile, on a rack above the farinata, chunks of summer squash are roasted until perfectly tender. Once both come out of the oven, the vegetables are scattered over the pancake, along with creamy goat cheese and zippy preserved lemon. Served with a glass of chilled vermouth or rosé, it’s one of our favorite summer meals (and the only “gluten-free pizza” in our dinner rotation!).
