What I appreciate about Shapiro-Barnum’s conversations is that they really reflect the weird, single-minded obsessions that young kids can have. Thus far, these have included [komodo dragons](~/AASU4wA~/RgRk7IxpP0QraHR0cHM6Ly93d3cueW91dHViZS5jb20vd2F0Y2g_dj1DbGFkcXlLMXlzZ1cDc3BjQgpjBmkHCmM0jfO6Uht0cmlzdHJhbWJhbGR3aW44NUBnbWFpbC5jb21YBAAAACU~), [splashing in the pool](~/AASU4wA~/RgRk7IxpP0QraHR0cHM6Ly93d3cueW91dHViZS5jb20vd2F0Y2g_dj1hcDJ6a3BQdlZyZ1cDc3BjQgpjBmkHCmM0jfO6Uht0cmlzdHJhbWJhbGR3aW44NUBnbWFpbC5jb21YBAAAACU~) and, in the video my friend sent me, [corn](~/AASU4wA~/RgRk7IxpP0QraHR0cHM6Ly93d3cueW91dHViZS5jb20vd2F0Y2g_dj0xVmJaRTZZaGpLa1cDc3BjQgpjBmkHCmM0jfO6Uht0cmlzdHJhbWJhbGR3aW44NUBnbWFpbC5jb21YBAAAACU~). “For me, I really like corn,” says the boy, whose video started making the rounds on social media under the hashtags #cornboy and #CEOofCorn. “Ever since I was told corn was real, it tasted good. When I tried it with butter, everything changed!” ~/AASU4wA~/RgRk7IxpP0QraHR0cHM6Ly93d3cueW91dHViZS5jb20vd2F0Y2g_dj0xVmJaRTZZaGpLa1cDc3BjQgpjBmkHCmM0jfO6Uht0cmlzdHJhbWJhbGR3aW44NUBnbWFpbC5jb21YBAAAACU~ Corn Boy, whose real name is Tariq, has since been in a[follow-up video](~/AASU4wA~/RgRk7IxpP0QraHR0cHM6Ly93d3cueW91dHViZS5jb20vd2F0Y2g_dj1ZeUtHN3hRelJrQVcDc3BjQgpjBmkHCmM0jfO6Uht0cmlzdHJhbWJhbGR3aW44NUBnbWFpbC5jb21YBAAAACU~) in which he discusses, among other things, the top three ways to eat corn: with “the grease,” “toasted” and “toasted with butter and the grease.” And while I can’t necessarily attest to the culinary definition of “the grease” — though he tells Shapiro-Barnum that it’s “actually kind of the thing that makes the corn good” — I do agree with Tariq that eating good, fresh corn is one of the highlights of summer, something we’ve explored wholeheartedly this week here at [Salon Food](~/AASU4wA~/RgRk7IxpP0QgaHR0cHM6Ly93d3cuc2Fsb24uY29tL3RvcGljL2Zvb2RXA3NwY0IKYwZpBwpjNI3zulIbdHJpc3RyYW1iYWxkd2luODVAZ21haWwuY29tWAQAAAAl). During Corn Week, we dove into the various ways that corn (which, fun fact per the USDA, can actually be a grain or a vegetable, based on when it is harvested) can be prepared, from being ground for cornbread and Milk Bar-inspired taco truffles, to being chargrilled for elote, to being used as the basis for bourbon. Here are some of our favorite stories and recipes about the summer staple. [This crispy, fried secret ingredient is the best way to upgrade homemade chili](~/AASU4wA~/RgRk7IxpP0RvaHR0cHM6Ly93d3cuc2Fsb24uY29tLzIwMjIvMDgvMjIvdGhpcy1jcmlzcHktZnJpZWQtc2VjcmV0LWluZ3JlZGllbnQtaXMtdGhlLWJlc3Qtd2F5LXRvLXVwZ3JhZGUtaG9tZW1hZGUtY2hpbGkvVwNzcGNCCmMGaQcKYzSN87pSG3RyaXN0cmFtYmFsZHdpbjg1QGdtYWlsLmNvbVgEAAAAJQ~~) My dad doesn’t have many rules in the kitchen — but one nonnegotiable is that chili has to be topped with hand-torn cornbread tossed in spitting hot oil. The resulting cornbread croutons are crispy and a little sweet, making them the perfect thing to soak up umami-rich, spiced broth. [The trick to perfect cornbread is letting the cornmeal, corn flour, and buttermilk sit overnight](~/AASU4wA~/RgRk7IxpP0SAaHR0cHM6Ly93d3cuc2Fsb24uY29tLzIwMjAvMTEvMjgvdGhlLXRyaWNrLXRvLXBlcmZlY3QtY29ybmJyZWFkLWlzLWxldHRpbmctdGhlLWNvcm5tZWFsLWNvcm4tZmxvdXItYW5kLWJ1dHRlcm1pbGstc2l0LW92ZXJuaWdodC9XA3NwY0IKYwZpBwpjNI3zulIbdHJpc3RyYW1iYWxkd2luODVAZ21haWwuY29tWAQAAAAl) On that note, are you looking to make your homemade cornbread even better? According to writer Kelly Fields, the trick to this perfect cornbread is letting the cornmeal, corn flour and buttermilk sit overnight. “This allows the corn flour to fully hydrate, while the acid from the buttermilk tenderizes the cornmeal, helping to create a tender, almost cakey bread that still retains that slightly gritty texture you expect,” she writes. [Looking for love and finding elote: A meditation on Mexican street corn](~/AASU4wA~/RgRk7IxpP0RoaHR0cHM6Ly93d3cuc2Fsb24uY29tLzIwMjIvMDgvMjMvbG9va2luZy1mb3ItbG92ZS1hbmQtZmluZGluZy1lbG90ZS1hLW1lZGl0YXRpb24tb24tbWV4aWNhbi1zdHJlZXQtY29ybi9XA3NwY0IKYwZpBwpjNI3zulIbdHJpc3RyYW1iYWxkd2luODVAZ21haWwuY29tWAQAAAAl) About a decade ago, I vividly remember walking about a block down from the 82nd Street–Jackson Heights station and running into a woman who had built a mobile grill using a shopping cart and a grate wrapped in aluminum foil. She'd use a thick brush to slather an entire row of freshly-peeled, charred corn on sticks with thin mayonnaise in a motion that looked like she was painting a fence. She'd give it a sprinkle of Tajin, then roll it in salty, crumbled cotija. Eating elote became an unexpected, but oddly defining, part of an old relationship of mine. When that eventually fizzled, my fascination with stories of steadfast eloteros did not. [A spicy taste of Mexican street corn, ready in 15 minutes](~/AASU4wA~/RgRk7IxpP0RaaHR0cHM6Ly93d3cuc2Fsb24uY29tLzIwMjIvMDQvMTcvYS1zcGljeS10YXN0ZS1vZi1tZXhpY2FuLXN0cmVldC1jb3JuLXJlYWR5LWluLTE1LW1pbnV0ZXMvVwNzcGNCCmMGaQcKYzSN87pSG3RyaXN0cmFtYmFsZHdpbjg1QGdtYWlsLmNvbVgEAAAAJQ~~) Speaking of street corn, Salon senior writer Mary Elizabeth Williams was inspired by a recent trip to Sedona to give frozen corn — mixed with mayonnaise, cotija and lots of fresh cilantro — a trip under the broiler to make a delectable dip that hits all the same notes as esquites. [Missed the Milk Bar-Taco Bell collab? This isn't an accident — it's a stipulation that was written into law more than 100 years ago. But how, exactly, did corn become such an integral part of America's Native Spirit? [The truth behind my grandma's (not-so-secret) corn casserole](~/AASU4wA~/RgRk7IxpP0RjaHR0cHM6Ly93d3cuc2Fsb24uY29tLzIwMjEvMTAvMjQvdGhlLXRydXRoLWJlaGluZC1teS1ncmFuZG1hcy1ub3Qtc28tc2VjcmV0LWNvcm4tY2Fzc2Vyb2xlX3BhcnRuZXIvVwNzcGNCCmMGaQcKYzSN87pSG3RyaXN0cmFtYmFsZHdpbjg1QGdtYWlsLmNvbVgEAAAAJQ~~) Kelly Vaughan writes that she grew up eating what she knows of as corn casserole and what you may know of as spoon bread or corn bowl. “It's not quite cornbread, but also not a layered casserole or gratin,” she said. “To call it magical might be a bit of an overstatement, but not by much.” When Vaughan was ten years old, she decided she wanted to start her own cooking show. It was filmed by her parents, the “theme song” Vaughan on clarinet — and one of the first recipes she tackled was this corn casserole, thanks to her grandmother's 6-ingredient recipe. [Summer corn and fresh blueberries meet in this decadent cannabis-infused frozen dessert](~/AASU4wA~/RgRk7IxpP0R5aHR0cHM6Ly93d3cuc2Fsb24uY29tLzIwMjIvMDcvMDkvc3VtbWVyLWNvcm4tYW5kLWZyZXNoLWJsdWViZXJyaWVzLW1lZXQtaW4tdGhpcy1kZWNhZGVudC1jYW5uYWJpcy1pbmZ1c2VkLWZyb3plbi1kZXNzZXJ0L1cDc3BjQgpjBmkHCmM0jfO6Uht0cmlzdHJhbWJhbGR3aW44NUBnbWFpbC5jb21YBAAAACU~) Maybe you’re just looking for a way to chill out — figuratively and metaphorically — as summer starts to turn to fall. For that, look no further than Tracey Meidoros’ luxurious sweet corn ice cream topped with fresh blueberries and a brown sugar crumble. The Flesch readability score uses the average length of your sentences (measured by the number of words) and the average number of syllables per word in an equation to calculate the reading ease. Text with a very high Flesch reading ease score (about 100) is straightforward and easy to read, with short sentences and no words of more than two syllables. Usually, a reading ease score of 60-70 is considered acceptable/normal for web copy.
